Apple Enchiladas Hannah Heath • Belle Fourche, S.D.


2 Tbsp. Canola Oil

6 Corn Tortillas, cut into 1-inch pieces

1 lb. Ground Beef (85/15)

1-1/2 c. Onion, chopped

1 c. Bell Pepper, chopped

1 t. Fresh Garlic, minced

2 (14-1/2 oz) cans Mexican Style Tomatoes, undrained

2 (14-1/2 oz) cans Water

1 (15 oz) can Small Red Beans, undrained

1 (15 oz) can Black Beans, drained and rinsed

1 (15 oz) can Hominy, undrained or Frozen Corn

1 (7 oz) can Diced Green Chile Peppers

1 (7 oz) can Pitted Black Olives, sliced

1 (1-1/4 oz) pkg. Taco Seasoning Mix

Salt and Pepper
