Pinwheel Meat Roll
Lana Gosch, Amherst, Neb.
3/4 lb. Ground Beef
1/4 lb. Ground Pork
1 Egg, beaten
1 c. Soft Bread Crumbs
2 Tbsp. Onion, chopped
1/2 t. Salt
1/2 t. Black Pepper
2 Tbsp. Steak Sauce
Filling Ingredients:
1/4 c. Onion, finely chopped
1/2 c. Celery, diced
1 c. Carrot, finely shredded
1/2 t. Salt
2 Tbsp. Butter
Mix all ingredients together. Place the mixture between two pieces of waxed paper. Roll into an oblong shape about 1/4-inch thick. For filling, cook celery and onion in butter until softened. Add carrots and seasonings. Cool before placing on meat mixture. Remove top piece of waxed paper. Spread with filling and roll up as for a jelly roll. Chill 1 to 2 hours. Bake uncovered in a 350 degree oven for 1 hour in a 9-by-13-inch pan.

Quick Salisbury
Janis Lingenfelter, Plainview, Neb.
1-1/2 lbs. Lean Ground Beef
1 Tbsp. Salt
Small amount of Fat for browning
3/4 c. Flour
1/4 t. Pepper
1 can Onion Soup
Shape into 8 beef patties. Dip into seasoning and brown in fat. Pour over 1 can of soup, do not dilute. Simmer 20 minutes.

Quick and Easy Sloppy Joes
Faith Harrold, Broken Bow, Neb.
2 lbs. Hamburger, browned
1 envelope Onion Soup Mix
1 can Tomato Soup
1/2 can Water
Mix together.
