Cauliflower fritters Nancy Wenlock • Sterling, Colo.
1 cauliflower
Break cauliflower into florets. Preheat oven to 200 degrees. Boil 4 qts. water and add cauliflower and 1 Tbsp. salt. Cover reduce heat and simmer until cauliflower is soft enough to mash - 10-12 minutes. Drain cauliflower, put in large bowl and mash with a fork. Let cool until no longer steaming. Add eggs, garlic, and hot sauce. Mix in flour, baking powder, paprika, pepper and 1/2 t. salt. |
