Cauliflower fritters

1 cauliflower
1 Tbsp. plus 1 t. salt
3 large eggs, beaten
2 cloves garlic, minced
1/2 t. tabasco
1 Tbsp. flour
1 t. baking powder
1/2 t. paprika
1/4 t. pepper
2 t. olive oil
1 tbsp. parsley
Sour cream, salsa or chutney (optional)

Break cauliflower into florets. Preheat oven to 200 degrees. Boil 4 qts. water and add cauliflower and 1 Tbsp. salt. Cover reduce heat and simmer until cauliflower is soft enough to mash - 10-12 minutes. Drain cauliflower, put in large bowl and mash with a fork. Let cool until no longer steaming. Add eggs, garlic, and hot sauce. Mix in flour, baking powder, paprika, pepper and 1/2 t. salt.
Heat fry pan on med-high heat and add 1 t. oil. Drop cauliflower mixture by Tbsp. into pan and cook, turning once, until fritters are golden brown on both sides. Transfer to baking sheet and keep warm in oven while cooking remaining batter. Add oil as needed.
Garnish with parsley and condiments as desired.
