Cheesy Broccoli Brunch Casserole

12 slices whole-wheat bread, cubed, divided in half
1/2 cup chopped red pepper, divided in half
3 cups sharp cheddar cheese, grated, divided in half
1 1/2 cups fresh broccoli florets
2 cups cholesterol-free egg product
3 cups milk
1 tsp. dried thyme
Preheat oven to 350 degrees.
Layer half of the bread, red pepper and cheese in 9 x 13 baking dish sprayed with cooking spray; top with all of the broccoli; repeat second layer of bread, red pepper and cheese.
Beat egg product and milk with wire whisk until well blended. Pour evenly over ingredients in baking dish. Bake 50 minutes to 1 hour or until center is set. Let stand 5 to 10 minutes before cutting to serve.
