Meat Loaf

1 lb. lean ground beef
3 slices bread
8 oz. can tomato sauce
14.5 oz. can diced tomatoes
2 eggs
1/2 c. celery, diced
1/2 c. bell pepper, diced
1/2 c. onion, diced
1/2 c. dried mushrooms
1 Tbsp. parsley
1/4 stick butter
Salt & pepper to taste
Ketchup

Sauté celery, peppers, and onions until tender. Add mushrooms and sauté 3-4 minutes.

Mix all ingredients together. Cover with thin layer of ketchup. Bake 350 degree oven for 1-1/2 hours.

Serves 8-10
