Stewed Tomatoes

1 med. onion, peeled and minced
2 Tbsp. butter
6 lg. tomatoes
Salt to taste
1 t. brown sugar, packed
1/2 t. basil, crushed
1/8 t. pepper

Peel, core, seed and chop tomatoes.

In a saucepan over medium heat, sauté onions in butter until tender — but not brown; stir occasionally.

Stir in tomatoes, salt, brown sugar, basil, and pepper. Bring mixture to a boil.
Reduce heat and simmer covered 25-30 minutes.

Season to taste.

Makes 5 servings.
