Orange-Maple Marinated Pork Loin

2 t. grated orange rind
1-1/2 c. fresh orange juice (about 3 oranges)
2/3 c. maple syrup
3 Tbsp. mustard
2-1/2 Tbsp. fresh basil
2-1/2 Tbsp. soy sauce
3/4 t. black pepper
4 garlic cloves, minced
3-1/2 lb. pork loin, trimmed
cooking spray
1/2 t. salt

Combine orange rind, orange juice, maple syrup, mustard, basil, soy sauce, pepper, and garlic in a bowl and whisk together well. Combine 2 c. orange mixture and pork in a zip top bag and marinate for 8 hours, turning bag occasionally. Preheat oven to 350 degrees. Place marinade in a saucepan, bring to a boil, reduce heat and cook until reduced to 1 c., stirring occasionally. Place pork on a rack coated with cooking spray and place in roasting pan. Sprinkle with salt and bake at 350 degrees for 1 hour, basting with reduced marinade. Carefully pour 1/2 c. water into bottom of pan and bake an additional 45 minutes or until meat thermometer registers 160 degrees, basting occasionally. Discard remaining marinade. Remove pork from oven, cover and let stand for 10 minutes before slicing. Makes 12 servings.
