Oven-Fried Parmesan Chicken Diabetes Prevention and Control Program • www.cdphe.state.co.us/pp/diabetes
4 boneless, skinless chicken breasts, cut into strips
Preheat oven to 425 degrees. Spray cookie sheet. Place chicken strips in yogurt and refrigerate while preparing the rest of the ingredients. In a medium bowl, mix the rest of the ingredients. Coat each piece of chicken well with yogurt and dredge in crumb mixture, pressing down on both sides to get a thick coat of crumbs. Place chicken strips on cookie sheet and spray lightly with vegetable spray. Bake for 15-20 minutes, or until chicken is fork-tender and the juices run clear. |
