Irish Style Roasted Potatoes

8 Potatoes, peeled, cut into thirds
1/2 c. Flour
3 Tbsp. Vegetable oil
Kosher salt, to taste

Preheat oven to 450 degrees; place two large skillets or roasting pans in oven to heat up.
Place potatoes in large kettle and cover with cold, salted water.
Place on high heat and bring to a boil; lower heat and simmer for 5 minutes.
Drain potatoes well and place on paper towels.
Place flour on a plate and when potatoes are dry, roll in flour to coat, shaking off excess.
Remove hot skillets from oven and add half of the vegetable oil to each.
Divide potatoes equally, shaking the pan occasionally until they are golden brown all over, about 35 minutes.
Season with salt.
