Fruit cocktail salad

3 oz. pkg. instant lemon pudding
2 c. minature marshmallows
16 oz. can fruit cocktail, drained
8 oz. Cool Whip
1/2 c. walnuts, chopped (optional)
Beat milk and pudding until thick. Add marshmallows and fruit cocktail to pudding. Fold in Cool Whip.
Easy custard

1/4 c. sugar
3 eggs
1/4 tsp. salt
1/2 tsp. vanilla
nutmeg
Place milk in a 4 cup glass measure. Microwave 3-1/2 to 4-1/2 minutes on high. Add the rest of the ingredients except nutmeg. Beat well with rotary beater. Pour into (4) 6 oz. custard cups. Sprinkle with nutmeg. Microwave 6-1/2 to 10 minutes on medium or until set in center. If necessary, remove what are done and continue cooking until all are done.
Lunchbox cake

2 tsp soda
1 tsp. salt
1 c. brown sugar
2 eggs
1/4 c. soft butter
1 lb. can fruit cocktail, undrained
1/2 c. chocolate chips
1/2 c. nuts
Put all ingredients into mixer bowl and blend at low speed until all mixed. Pour into a 9x13” pan and bake at 350˚ for 35-40 minutes. Frosting is not necessary.
