Plains Edition Recipes 9-7-13

Fresh Corn Salsa

Ethel Williams, Papillion, Neb.

4 Tomatoes (1-1/2 lbs chopped)

1 c. Fresh corn, cooked

1/4 c. Red onions, finely chopped

1/4 c. Fresh parsley, chopped

1 Jalapeno pepper, chopped

1/4 c. Zesty Italian dressing

Combine all ingredients. Makes 3 cups.

Real Good Dip

Kay Bedlan, Lewellen, Neb.

1 lb. Lean hamburger

1 lb. Sausage

1 lb. Velvetta cheese

1 can. Golden mushroom soup

Brown hamburger and sausage; drain. Add cheese and soup. Heat over low temperature until cheese is melted and thoroughly blended. Serve with tortilla chips. Best served warm.

Guacamole Salad

JK Chappell, Gering, Neb.

8 c. Mixed salad greens, torn

2 c. Grape tomatoes, halved

1 large Avocado, chopped

1/2 c. Red onions, thinly sliced

1/2 c. Italian dressing and marinade

2 Tbsp. Fresh lime juice

15 Tortilla chips, coarsely chopped

Combine first four ingredients in a large bowl. Mix dressing and lime juice. Add to salad and toss. Top with crushed chips.
