Apple Pie Bread | Darlene Hrouda – Stanton, Neb.

2/3 c. brown sugar, divided
1/2 tbsp. ground cinnamon
1/3 c. white sugar
1/4 c. butter, softened
1/4 c. applesauce
2 eggs, well-beaten
1 tsp. vanilla extract
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/3 c. milk
1 large apple, peeled and chopped
1 tbsp. butter, melted

Preheat oven to 350 degrees.
Grease and flour a 8 x 5-inch loaf pan.
Combine 1/3 c. brown sugar and cinnamon in a small bowl and set aside.
With mixer, cream white sugar, remaining brown sugar and butter until fluffy.
Mix in applesauce, beaten eggs and vanilla.
Stir together flour and baking powder.
Add flour to egg mixture along with milk and stir just until combined.
Pour half of the batter into the loaf pan.
Sprinkle with half of the apple and half of the cinnamon mixture.
Stir in the remaining apples into the remaining batter and pour or spoon into the pan.
Top with the remaining cinnamon mixture.
Bake 40 minutes and brush topping with melted butter.
Continue baking an additional 5 to 10 minutes, or until a toothpick inserted in the center comes out clean.
Let cool 20 minutes and remove from pan.
