Favorite Plains Recipes for 3-28-09

2 lbs. cooked & cubed chicken
1 can mandarin oranges (drained, reserve liquid)
1/3 c. light mayonnaise
2 small apples (chopped)
4 c. shredded or chopped lettuce
1/4 c. pecans or walnuts
1 stalk celery (1/2 c. approx.) chopped
In large bowl add chicken, apples, celery, nuts, and mix well. In smaller bowl mix mayonnaise adding enough reserved liquid stirring to dressing consistency. Add dressing to mixture, serve over bed of lettuce.
