Plains Edition Recipes 12-10-11

2/3 c. Honey

1 (13 oz) can Evaporated Milk

6 Tbsp. Oleo

6 Tbsp. Flour

1-1/4 c. Sugar

1 t. Vanilla

1 c. Pecans, chopped

1/3 c. Dipping Chocolate

1 c. Pecan Meal

1 c. Pecan Halves

Bring honey, milk, oleo, flour and sugar to a bubble, stirring constantly until mixture reaches 242 degrees. Remove from heat and add vanilla and chopped pecans. Mix well and pour into well buttered 8-by-8-inch pans. Sprinkle top with grated chocolate while hot. Swirl with fork as it melts. Allow to cool to room temperature. (Overnight is best.) Slice into 36 or 49 squares. Drop each square in pecan meal, roll into a ball and place a pecan half on top.
