Plains Edition Recipes for 10-15-11

2 Tbsp. Onion, minced

1 Garlic clove, minced

1 (10 oz) box Frozen spinach, drained

1 c. Cottage cheese

3 Eggs

1/4 c. Swiss cheese, shredded

1 (9-inch) Pie shell, unbaked

In a large bowl, combine onion, clove, spinach, cottage cheese, eggs and swiss cheese. Pour mixture into pie crust. Bake at 425 degrees for 12 minutes. Then lower the temperature to 375 degrees and bake for an additional 25-30 minutes.
