3 c. potatoes, diced

3/4 c. carrots, shredded

1/2 c. onion, diced

1 c. water

1 can celery soup

1 c. ham, diced

Combine potatoes, carrots, onion and water in a bowl. Cover and microwave 4 to 5 minutes. Mash vegetables with fork. Add celery soup and milk. Add Velvetta and ham. Mix well. Cover, microwave until hot and cheese is melted.
