Plains Edition Recipes for 3-26-11

From the kitchen of: Carolyn Russell, Palmer, Neb.

2 lbs. hamburger

1 sm. onion, diced



1 sm. can chopped green chilies, undrained

1 can enchilada sauce (red, mild)



1 can cream of mushroom soup

1 can pinto or chili beans, partially drained

1 lb. cheddar cheese, shredded

a few sliced black olives

flour tortillas

Brown hamburger and onion in skillet. Drain off fat. Add green chilies, enchilada sauce, soup and beans to hamburger, and mix well. Layer in a casserole dish (round one works well) in the following order: tortilla, hamburger mixture, cheese. Repeat until you’ve made about 5 or 6 layers. Add sliced black olives on top. Bake for 25-30 minutes at 350° or until heated through and cheese is melted.
