Plains Edition Recipes for 3-5-11

1 boneless chicken breast

1-1/2 c. chopped fresh or frozen broccoli

1 stalk celery, chopped

2 Tbsp. onion, chopped

1 c. rice, uncooked

1 can cream of chicken soup

1/4 c. milk

1/4 c. Miracle Whip salad dressing

2 Tbsp. coarse ground or spicy brown prepared mustard

Salt and pepper, to taste

1 c. shredded cheese

Bake chicken breast at 350° for 30 min. or until cooked thoroughly. While baking chicken, boil broccoli, celery, and onion to al dente: drain. Cook rice. Chop cooked chicken into bit-sized pieces; combine with rice and veggies in a mixing bowl. Add soup, milk, Miracle Whip, mustard, salt and pepper and about 1/2 c. of the cheese. Mix until well combined. Put mixture into a lightly greased casserole dish. Spread remaining 1/2 c. cheese on top. Bake at 350° for 20 min. or until hot and cheese is melted.
