From the kitchen of: Lisa Kalmbach, Papillion, Neb.

(4) skinless, boneless chicken breast halves

1/2 tsp. salt

1/4 tsp. fresh ground pepper

1 Tbsp. + 1 tsp. unsalted butter

1/2 c. chicken broth

1/4 c. fresh lemon juice

1 Tbsp. drained capers

1/2 tsp. dried oregano

egg noodles, cooked

Sprinkle chicken with 1/4 tsp. salt and 1/8 tsp. pepper. Cook chicken over med. heat in pan with 1 Tbsp. melted butter for 2 minutes each side. Add broth, lemon juice, capers and oregano; bring to a simmer. Reduce heat, simmer turn chicken once to coat with sauce until chicken is cooked through – about 2 minutes. Remove from heat. Add remaining butter, salt and pepper. Serve over cooked egg noodles.
