2 lbs. butternut squash

1 c. water

lg. can pineapple chunks, drained

1/2 c. dried fruit (apples, cherries or peaches)

2 Tbsp. pecans, chopped

2 Tbsp. maple syrup

1 Tbsp. brown sugar

1 tsp. lemon rind, grated

Preheat oven to 350°; cut squash in half. Scoop out seeds with a spoon. Lay squash cut side down in shallow baking dish. Add water to dish. Bake for 45 minutes or until squash is tender. Cool at least 15 minutes. Remove flesh from rind with a spoon. Place flesh in a food processor for 1 minute or until smooth. Place in casserole dish. Combine rest of ingredients and spoon over squash. Bake uncovered for 30 minutes.
