Plains Edition Recipes for 8-13-11

From the kitchen of: Anita Olson, Ericson, Neb.

6 c. fresh mulberries (can mix in other fresh berries)

2 Tbsp. lemon juice

1 Tbsp. honey

1 Tbsp. cornstarch

1/4 c. water

Combine ingredients to make filling and let stand for 10 minutes in saucepan. Then cook and stir until thickened and bubbly.

Topping:

1 c. flour

1/4 c. brown sugar

1-1/2 tsp. baking powder

1 tsp. cinnamon

1/4 tsp. salt

1/4 c. cold butter

1 egg

1/4 c. milk

Stir together topping dry ingredients. Cut in butter until it resembles coarse crumbs. In small bowl combine egg and milk. Add to flour mixture and stir until just moistened. Pour filling into 9×9″ baking dish. Spoon topping onto filling. Sprinkle with brown sugar. Bake at 400° for 20-25 minutes until toothpick inserted in topping comes out clean.
