Rocky Mountain Recipes 1-4-10
1-1/2 c. Sugar
2/3 c. Shortening
1 t. Vanilla
1/3 t. Salt
1/2 c. Cocoa
3 Eggs
2-1/2 c. Cake flour, sifted
1 t. Baking soda
1 t. Baking powder
1 c. Water
1/2 c. Sauerkraut, chopped, drained
Cream sugar and shortening with an electric mixer on medium speed for 10 minutes. Add vanilla, salt and cocoa then continue beating for 5 minutes on low. Add eggs and blend for 5 minutes. Sift flour, baking soda and baking powder together. Add alternately with water, using low speed. Add sauerkraut and mix thoroughly. Pour into a greased and floured 9-by-13-inch pan and bake at 375 degrees for 45 minutes. Cool and frost with your favorite frosting.
