Rocky Mountain Recipes 11-29-10
2 c. Flour
1 c. Sugar
1-1/2 t. Baking Powder
1/2 t. Soda
1/2 t. Salt
1/4 c. Shortening
3/4 c. Orange Juice
1 Tbsp. Orange Rind, grated
1 Egg
1/2 c. Nuts, chopped
2 c. Cranberries, halved
Sift flour, sugar, baking powder, soda and salt together. Add shortening, juice, rind and egg.
Mix thoroughly. Add cranberries and nuts. Pour into 2 small loaf pans and bake at 350 degrees for 1 hour.
