Rocky Mountain Recipes 12-26-11
2 c. All-purpose Flour
3/4 c. + 2 Tbsp. Sugar
1/2 c. Unsweetened Cocoa Powder
1 t. Baking Soda
1/2 t. Salt
1/2 c. Sour Cream
1/2 c. Milk
1/3 c. Vegetable Oil
2 Eggs
2 t. Vanilla Extract
3/4 c. Dried Fruit Bits
1/2 c. + 2 Tbsp. Mini Semisweet Chocolate Chips
Grease your muffin pans or use cupcake papers. In a bowl, whisk together the flour, 3/4 c. sugar, cocoa powder, salt, and baking soda. Whisk the sour cream, milk, oil, eggs and vanilla. Add to flour mixture. Whisk until smooth. Stir in dried fruit and 1/2 of mini chocolate chips. Sprinkle each muffin with 1/2 t. sugar and 1/2 t. mini chocolate chips. Bake at 350 degrees for 20 minutes or until toothpick comes out clean.
