Vegetable beef stew

2 Tbsp. Olive Oil

1 Onion, diced

1 Celery Stalk, diced

1 Carrot, diced

2 t. Italian Seasoning

1/2 t. Hot Pepper Flakes

1 (14.5 oz) can Tomatoes, diced

2 (15 oz) cans Small White Beans, undrained

1 c. Small Tubular Pasta

1 lb. Mixed vegetables

Salt and Pepper

Parmesan Cheese, optional

Heat oil. Add onions, celery, carrots. Saute about 5 minutes. Add Italian seasoning and red pepper flakes. Saute a minute longer. Add mixed veteables: Green Peas, Zucchini, Spinach, Etc. Add remaining ingredients. Cover and bring to a simmer. Simmer about 15 minutes longer. Sprinkle parmesan cheese before serving.
