Rocky Mountain Recipes 4-25-11

1-1/4 c. plus 1 Tbsp. Sugar

1/4 c. Flour

3/4 t. Nutmeg

3 Eggs, slightly beaten

3 c. Rhubarb, cleaned and cut up

2 Tbsp. Butter

Stir together the sugar, flour and nutmeg. Add the eggs and mix well. Add the rhubarb and stir to coat all the pieces. Put mixture into a 9-inch unbaked pie shell. Dot with the butter. Bake at 425 degrees for 10 minutes. Reduce heat to 350 degrees and bake another 50 minutes. Cool completely before slicing.
