1 Eggplant, peeled, cut into cubes, parboiled

1 c. Green Onions, chopped

1 can Stewed Tomatoes, drained

1 lb. Sausage, cooked, drained

1/2 c. Celery, diced

Cover the bottom of a greased a 2-quart baking dish with bread crumbs. Add eggplant, celery, bell peppers, onions, sausage and tomatoes. Cover and bake at 350 degrees for 45 minutes. Add remaining bread crumbs and cheese. Return to oven for 3-4 minutes until the cheese melts. Serve hot.
