Crescent Italian Bake1 lb. hamburger1 c. mushrooms1/2 t. salt1/2 t. pepper8-oz. tomato sauce1 c. shredded cheddar cheese8-oz. pkg. crescent rolls1/2 c. sour cream1/4 t. oregano1/4 t. basil Brown meat with onion and mushrooms; drain. Add salt, pepper and tomato sauce.Put meat in casserole dish and sprinkle cheese on top.Mix sour cream, basil, oregano. Spread out crescent rolls . Spread with sour cream mixture. Re-roll and place rolls on top of cheese/meat mixture.Bake at 375 °F for 26 to 35 minutes.L. Swanson – Greeley, Colo.

Quick Quiche

1 9” pie crust

1 t. softened butter

3 oz. smoked salmon, flaked

1-1/2 c. asparagus spears, cut small

1 c. shredded Monterey Jack cheese

3 eggs

1 c. whipping cream

1 t. caraway seed

Salt and pepper to taste

Place pie crust in quiche dish. Spread butter over pie crust. Sprinkle salmon over butter. Sprinkle asparagus over salmon followed by shredded cheese.

Combine eggs, cream, caraway, salt and pepper; mix well and pour over filled crust.

Bake in preheated 425 F oven for 15 minutes; reduce temperature to 325 F and bake about 30 more minutes or until knife inserted in center comes out clean.

Let stand 10 minutes before serving to 6 guests.

Buttermilk Dressing

1/2 c. buttermilk

2-oz. goat cheese

1/4 t. lemon zest

1/4 t. chopped thyme

In blender, pulse all of the ingredients until mixed, but not smooth.

Serve with Romano or crisp lettuce.

Flourless Cheese Souffle’

2 Tbsp. butter, softened

6 lg. eggs, separated

Pinch of Cayenne pepper

1/2 t. freshly grated nutmeg

Salt and freshly ground black pepper

4 oz. cream cheese, softened

1-1/2 c. finely grated Gruyere or Swiss cheese

Preheat oven to 425 F. Coat a 6-cup souffle dish with butter.

In a mixing bowl, combine the egg yolks, cayenne, nutmeg, salt and pepper. Beat with wire whisk until light and fluffy. Add cream cheese and grated cheese and whisk until well combined and smooth.

In another bowl, beat the egg whites until somewhat stiff peaks form. Fold the egg whites into the cheese mixture. Spoon into the greased dish and place on a baking sheet.

Bake for 10 minutes. Reduce the heat to 400 F and bake an additional 15 minutes. Serve immediately.

Sweetened Condensed Milk

6 c. powdered milk

2 c. sugar

2 Tbsp. margarine

1 c. very hot water

Whirl in blender until smooth.

Makes 3 cups.
