Rocky Mountain Recipes 7-13-09
7 c. Apples, cut up
1/2 c. Sugar
3 Tbsp. Lemon juice
3 Egg yolks
1/3 c. Milk
1/2 Tbsp. Lemon rind
2 Tbsp. Flour
Meringue:
3 Egg whites
1/4 c. Cream of Tartar
6 Tbsp. Sugar
Mix cut up apples and lemon juice; toss lightly. Mix together sugar, flour, milk, egg yolks and lemon rind. Add apples in batter and mix to coat well. Place in 9-inch pie pan. Dot with butter. Bake at 350 degrees for 45 minutes or until apples are tender. Remove from oven.
Make meringue by beating eggs until foamy. Add sugar 1 tablespoon at a time until stiff peak. Top pie with meringue and bake until the top is lightly browned.
