BBQ Bison Ribs
4 to 6 lbs. bison short ribs.
3/4 to 1 cup of water
16 oz. jar of your favorite BBQ sauce
Using a rectangle cake pan, lay out 4 to 6 lbs of bison short ribs.
Add 3/4 to 1 cup of water and a 16oz jar of your favorite BBQ sauce (we like KC Masterpiece).
Cover with foil and bake at 225° for 8 hours.
We like to serve with baked beans, coleslaw, fresh pineapples and strawberries.

Chuck Wagon Roast
1 large Bison Chuck Roast

Garlic Recipe Secrets dry soup mix
1 – 2 cups of water
1 tbsp. of olive oil
Put a large Bison Chuck Roast and in either a rectangle baking pan or crock pot (previously sprayed with oil).
Mix separately dry soup mix, water and 1 tbsp. of olive oil, then pour over the roast.
Bake in oven at 225° for 6-8 hours, or in your crock pot on low all day.
We suggest serving it with garlic mashed potatoes and steamed fresh broccoli. This roast will be tasty and so tender it will fall off the bone.

Mamaw’s Buffalo Chili
1 -2 lbs. bison round or sirloin steak
1 Tbsp. olive oil
1/2 diced med.red onion
4 – 6 diced tomatoes
2 to 4 diced Ortega chilies
1 can tomato soup
1 can water
1 Tbsp. parsley
1Tbsp. chili con carne
1Tbsp. black pepper
1/2 Tbsp. garlic salt
1/2 Tbsp. chili powder
1 Tbsp. paprika
1Tbsp. crushed red pepper
Cube steak, add olive oil,red onion,tomatoes, chilies, tomato soup, water, parsley, chili con carne, black pepper, red pepper, garlic salt, chili powder, and paprika.
Cook these ingredients either in a crockpot or on the stove on low for 4 to 6 hours.
Optional ingredients:
Add 2 cups cooked pinto beans,
2 cups cooked kidney beans,
2 cups cooked black beans
and cook for another hour.
We like to serve with corn muffins (corn muffins made with a buffalo cookie cutter).

Bison Sirloin Salsa Roast
Bison Sirloin Tip Roast
24 – 32 oz. of your favorite salsa
Use a Bison Sirloin Tip Roast and place it in it in either a crockpot or rectangle baking pan (previously sprayed with oil) then add 24 – 32 oz of your favorite salsa.
Cook all day in the crock pot on low, or in the oven at 200 degrees.
The flavor of your salsa will cook into the bison roast and it will be so tender you will be able to cut it with a fork.
We suggest serving it with Spanish rice, flour tortillas and sour cream. You can eat it like fajitas. It is the best and easiest roast recipe ever!

Caribbean Style New York Steak
2 New York steaks
1/2 c. Lawry’s Caribbean Jerk marinade sauce
Splash of orange juice
Marinate steaks with marinade sauce along with a splash of orange juice for 30 to 60 minutes.
Then grill em up on the barbeque until they are no more than 140 degrees on your meat thermometer.
We love to serve with wild rice and chopped fresh fruit like mangoes, papayas and melons.
