2-3 Tbsp. Olive Oil

1/4 c. Balsamic Vinegar

1 Zucchini, sliced thin

2 Tomatoes, sliced thin

1 (8 oz) bag Mozzarella Cheese

Preheat oven to 375 degrees. Cook onions in oil, until tender. Place onions in an oven baking dish. Add balsamic vinegar. Place layer of zucchini on top of onions. Place layer of tomatoes on top of zucchini. Cover and bake until fork tender. Remove from oven and top with cheese. Let stand covered with foil until cheese is melted.
