2 c. zucchini, grated
1/3 c. Bisquick
1/4 c. parmesan cheese
2 eggs, beaten
Mix all ingredients together well.
Fry zucchini cakes in hot oil; drop by using a large spoon for each cake.
Brown on both sides.
Drain on a paper towel.
