Classic Tzatziki | Marlene Maurer – Lakewood, Colo.
1 c. cucumber, grated, seeded and peeled.
1/8 tsp. salt
1 c. plain yogurt
1 tbsp. fresh mint, chopped
2 tsp. fresh dill, chopped
1/4 tsp. salt
2 tsp. fresh lemon juice
2 garlic cloves, minced
Place cucumber on several layers of paper towels.
Sprinkle with 1/8 tsp. salt.
Let stand 30 minutes.
Combine cucumber, yogurt and remaining ingredients, stirring until well blended.
Refrigerate at least 1 hour before serving.
